Parmigiano Reggiano is eight centuries old but does not show its age; it is one of the main PDO (Protected Designation of Origin) products from Emilia Romagna and the king of cheeses on all Italian tables. Since 1200, the slow production process of this semi-fat cooked curd cheese made with cow’s milk has remained loyal to absolute wholesomeness. Any type of preservatives and anti-fermentation agents are banned and the cheese must mature for at least 12 months under the watchful eye of 560 producers that form a special Consortium.
